- 2 (8-inch) pie shells
- 1 bunch green onions, chopped
- 4 Tbsp. butter
- 1 c. chopped bacon, cooked
- 6 eggs
- 2 c. heavy cream
- 1 tsp. salt
- 2 Tbsp. lemon juice
- 1 1/2 c. grated Swiss cheese
Directions

1Prick the pie shells and cook for 6 minutes at 400°.

2Saute the green onions in 4 tablespoons butter until soft.

3Sprinkle onions and bacon bits in equal portions over the bottom of pie shell. Top pies with grated cheese.

4Bake at 350° for 30 minutes or until golden and puffy. Serves 8.
