  • 2 (8-inch) pie shells
  • 1 bunch green onions, chopped
  • 4 Tbsp. butter
  • 1 c. chopped bacon, cooked
  • 6 eggs
  • 2 c. heavy cream
  • 1 tsp. salt
  • 2 Tbsp. lemon juice
  • 1 1/2 c. grated Swiss cheese

Directions

    Prick the pie shells and cook for 6 minutes at 400°.

    Saute the green onions in 4 tablespoons butter until soft.

    Sprinkle onions and bacon bits in equal portions over the bottom of pie shell. Top pies with grated cheese.

    Bake at 350° for 30 minutes or until golden and puffy. Serves 8.
