- 1 (9-inch) pie shell
- 8 slices bacon, diced
- 8 oz. natural Swiss cheese, shredded (2 c.)
- 1 Tbsp. flour
- 1/2 tsp. salt
- dash of nutmeg
- 3 beaten eggs
- 1 3/4 c. milk
Directions

1Bake pastry shell in very hot oven (450°) only 7 minutes, or just until lightly browned.

2Remove from oven; reduce oven temperature to 325°.

3Cook bacon until crisp; drain and crumble and reserve 2 tablespoons of the bacon bits.

4Place remaining bacon in pie shell; add cheese.

5Combine remaining ingredients and pour into pie shell.

6Trim with reserved bacon.

7Bake in slow oven at 325° for 35 to 40 minutes or until almost set in center.

8Let cool 10 to 15 minutes before serving.
