  • 3 eggs, whipped
  • 1 pt. light cream
  • 1/2 c. Swiss cheese, grated
  • salt and pepper to taste
  • cayenne to taste
  • 1/2 c. onion, chopped
  • 1/2 c. ham, diced
  • 1/4 c. butter, melted
  • 1/2 c. bacon, fried crisp and crumbled
  • 1/2 c. Swiss cheese, diced
  • pastry shell for (9-inch) quiche dish or (10-inch) pie plate

Directions

    Mix eggs, cream, grated cheese and seasonings.

    Saute onion and ham in butter; add bacon and diced cheese and spread evenly in bottom of pastry shell.

    Pour egg mixture over ham mixture and fill to the rim of shell.

    Bake at 400° for approximately 45 minutes or until set.

    Serves 8.
