  • 9 Inch Pie Shell
  • 8 Strips Bacon
  • 1/4 Medium Onion, Diced
  • 1 Cup Grated Swiss Cheese
  • 1/2 Cup Shredded Parmesan
  • 1 Cup Half-and-Half
  • 1/2 Cup Milk
  • 4 Eggs
  • Salt, Pepper, Nutmeg
  • Parsley Flakes And More Parmesan Cheese For Sprinkling

    Preheat oven to 450F.

    Cook bacon and crumble into pie shell.

    Cook onion in 1 tablespoon of the bacon grease.

    Add to the pie shell.

    Put cheeses into pie shell and loosely mix together cheeses, bacon and onion.

    In a large mixing bowl, stir milk, half & half and eggs in a bowl until combined.

    Add salt, pepper and a dash of nutmeg to taste.

    Pour over mixture in pie shell.

    Do not overfill!

    Bake at 450F for 20 minutes.

    Brush top with melted butter (optional) and sprinkle lightly with parsley flakes and grated parmesan.
