Ingredients

  • 1 (9-inch) pie pastry
  • 7 or 8 slices minced bacon
  • 1/2 c. shredded Cheddar cheese
  • 1 c. Mozzarella cheese
  • 1/3 onion
  • 4 eggs
  • 2 c. rich milk
  • 3/4 tsp. salt
  • 1/4 tsp. sugar
  • 1/8 tsp. red pepper

Directions

    Heat oven to 425°. Sprinkle bacon, cheese and onion in pastry shell. Beat eggs. Add other ingredients and pour into shell.

    Bake 15 minutes. Reduce heat to 300° and bake another 30 minutes.

    Let stand 10 minutes. Serve in wedges.

    May add asparagus or spinach. Serves 6 or 8.
