- 1 (9-inch) pie pastry
- 7 or 8 slices minced bacon
- 1/2 c. shredded Cheddar cheese
- 1 c. Mozzarella cheese
- 1/3 onion
- 4 eggs
- 2 c. rich milk
- 3/4 tsp. salt
- 1/4 tsp. sugar
- 1/8 tsp. red pepper
Directions

1Heat oven to 425°. Sprinkle bacon, cheese and onion in pastry shell. Beat eggs. Add other ingredients and pour into shell.

2Bake 15 minutes. Reduce heat to 300° and bake another 30 minutes.

3Let stand 10 minutes. Serve in wedges.

4May add asparagus or spinach. Serves 6 or 8.
