- 1 (16 oz.) carton cottage cheese
- 3 egg whites
- 5 eggs
- 1/4 c. buttermilk
- 1/4 c. flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 2 (8 oz.) grated sharp Cheddar cheese
- 2 green onions, chopped
- 10 slices bacon, cooked and crumbled
Directions

1Preheat oven to 400°.

2Place cottage cheese in a food processor and process until smooth.

3Transfer to a large bowl. Process egg whites until foamy.

4Add next 5 ingredients and process until smooth.

5Add egg mixture to cottage cheese.

6Stir in cheese, onions and bacon. Fill greased large muffin tins 2/3 full and bake 12 to 15 minutes or until edges are light brown.

7Makes 10 muffins.
