- 1 lb. dry pinto beans, lima beans or black-eyed peas
Directions

1Put beans or peas in a 4-quart pan; cover with water.

2Bring to a boil; boil for 10 minutes.

3Turn off burner; let set for 1 hour. Pour off water.

4Cover with 5 or 6 inches of water and bring to a boil.

5Add seasonings, salt, chili powder, garlic, salt pork, etc. Boil on low heat for 1 hour.
