Quick Beef Stroganoff

Ingredients

  • 1 pound beef stew meat trimmed, cut into thin strips
  • 2 tablespoons all-purpose flour
  • 2 teaspoons sweet paprika
  • 2 tablespoons vegetable oil
  • 1 spanish onion large, thinly sliced
  • 1 red pepper small, thinly sliced
  • 2 cloves garlic minced
  • 7 ounces button mushrooms thinly sliced
  • 1 zucchini small, thinly sliced
  • 3/4 cup beef stock
  • 13 1/2 ounces cherry tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon worcestershire sauce
  • 3/4 cup sour cream at room temperature
  • long grain white rice cooked, to serve

Directions

    Toss beef in flour and paprika. Heat 1 tbsp oil in a medium frying pan over medium-high heat. Cook beef, in batches, for 4-5 mins, or until beef is browned. Set aside.

    Add remaining oil to pan. Saute onion, pepper and garlic for 5 mins, or until softened. Add mushrooms and zucchini. Cook for 3 mins, or until mushrooms soften. Return beef to pan along with stock, tomatoes, tomato paste, Worcestershire sauce and sour cream. Simmer for 2-3 mins, until heated through.

    Serve stroganoff with rice.
