Quick Cheese Vegetable Soup

Ingredients

  • 2 Tbsp. oil
  • 1 small onion, chopped
  • 1 small bunch broccoli, cut up or frozen
  • 1/8 tsp. pepper
  • 1 can cream of potato soup
  • 1 can cream of celery soup
  • 2 c. water
  • 1 1/2 c. milk
  • 1 c. frozen peas (optional)
  • 4 oz. grated Cheddar cheese

Directions

    Cook oil, onion and broccoli until tender (about 5 minutes). Add soups and rest of ingredients (except cheese).

    Heat to boiling, reduce heat.

    Cover and simmer for 10 minutes; add cheese and serve.
