Quick Cheese Vegetable Soup

- 2 Tbsp. oil
- 1 small onion, chopped
- 1 small bunch broccoli, cut up or frozen
- 1/8 tsp. pepper
- 1 can cream of potato soup
- 1 can cream of celery soup
- 2 c. water
- 1 1/2 c. milk
- 1 c. frozen peas (optional)
- 4 oz. grated Cheddar cheese
Directions

1Cook oil, onion and broccoli until tender (about 5 minutes). Add soups and rest of ingredients (except cheese).

2Heat to boiling, reduce heat.

3Cover and simmer for 10 minutes; add cheese and serve.
