- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1/4 c. margarine
- 2 c. diced, cooked chicken
- 2 c. diced, cooked potatoes (about 4 small)
- 1/2 c. picante sauce
- 1 tsp. ground cumin
- 1/2 tsp. salt
- 1 c. (4 oz.) shredded Cheddar or Monterey Jack cheese
Directions

1Cook onion and green pepper in margarine in large skillet until onion is tender, but not brown.

2Add cooked potatoes, cooked chicken, picante sauce, cumin and salt; mix well.

3Simmer about 5 minutes, stirring occasionally.

4Top with cheese; cover skillet and let cheese melt.

5Serve with additional picante sauce if desired.
