Quick Chicken Stroganoff

Ingredients

  • 2 whole chicken breasts (skinned and boned)
  • 1 (3 oz) can undrained mushrooms
  • 3 T butter or margarine
  • 1/2 cup sour cream
  • 2 T finely chopped scallions (optional)
  • 1/2 tsp salt
  • 1 (10 1/2 oz) can cream of mushroom

Directions

    Cut chicken into strips.

    Melt butter in skillet over medium heat.
  3. 3
    Add chicken and scallions and sprinkle with salt.

    Cook 6-8 minutes, stirring occasionally, until chicken pieces are opaque. Add mushrooms with liquid, add 1/4 cup water.

    Heat to boiling, stirring until mixture is smooth.

    Reduce heat, Blend in sour cream and heat through, but do not boil.

    Serve over hot cooked noodles or rice.

    *I use boneless chicken breasts.
