Ingredients

  • 1 large onion, chopped
  • 1 clove garlic, crushed
  • 1 green bell pepper, shredded
  • 2 Tbsp. butter
  • 1 lb. lean ground beef
  • 1 (16 oz.) can Ranch beans
  • 2 1/2 Tbsp. chili powder
  • 1/4 c. water
  • 1 c. canned tomatoes with juice
  • 1 bay leaf
  • 1 1/2 tsp. salt
  • 1/2 tsp. cumin seed or 1/4 tsp. ground cumin
  • dash of cayenne pepper

Directions

    In a big saucepan, saute onion, garlic and green pepper in butter for 10 minutes, stirring occasionally.

    Add beef and saute for 1 minute (until beef is brown) the spoon out excess fat.

    Add chili powder, water, tomatoes, bay leaf, salt, cumin and cayenne. Bring to boil.

    Add beans and simmer for 30 minutes to 1 hour. Yields 6 to 8 servings.
