Quick Clam Linguini

- 8 oz. linguini, uncooked
- 3 to 5 cloves garlic, minced
- 1/4 c. plus 1 Tbsp. butter, melted
- 2 (6 1/2 oz.) cans minced clams, undrained
- 1 c. (4 oz.) shredded Monterey Jack cheese
- 1/4 c. chopped fresh parsley
Directions

1Cook linguini according to package, omitting salt.

2Drain linguini and set aside.

3Saute garlic in butter in a large skillet. Drain clams and add juice to skillet.

4Bring to a boil.

5Cook over medium heat for 7 minutes.

6Add clams and cheese.

7Cook over low heat, stirring constantly until cheese melts.

8Pour sauce over linguini; add parsley and toss gently.

9Serves 4.
