- 1 pkg. yellow cake mix
- 1/2 c. softened butter
- 2/3 c. water
- 3 eggs
- 1 (8 oz.) can crushed pineapple, drained
- 1 c. flaked coconut
- 1 c. chopped pecans
- 1 tsp. almond extract
- 1 tsp. coconut extract
Directions

1In a mixing bowl, beat the cake mix and butter. Add water, lightly beaten eggs, drained pineapple, almond and coconut extracts; mix well, then fold in coconut and pecans. Spoon into greased or paper-lined muffin tins, filling 2/3 full. Bake in 350° oven for 20 minutes. Cool a bit before removing from pan.
