  • 1 pkg. yellow cake mix
  • 1/2 c. softened butter
  • 2/3 c. water
  • 3 eggs
  • 1 (8 oz.) can crushed pineapple, drained
  • 1 c. flaked coconut
  • 1 c. chopped pecans
  • 1 tsp. almond extract
  • 1 tsp. coconut extract

Directions

    In a mixing bowl, beat the cake mix and butter. Add water, lightly beaten eggs, drained pineapple, almond and coconut extracts; mix well, then fold in coconut and pecans. Spoon into greased or paper-lined muffin tins, filling 2/3 full. Bake in 350° oven for 20 minutes. Cool a bit before removing from pan.
