  • 1 package (18.25 Oz. Size) Yellow Cake Mix
  • 1/2 cups Butter, Softened
  • 1 can (8 Oz. Can) Crushed Pineapple, Drained
  • 2/3 cups Water
  • 3 whole Eggs
  • 1 cup Flaked Coconut
  • 1 cup Chopped Nuts (optional)
  • 1 teaspoon Rum Extract
  • 1 teaspoon Coconut Extract

Directions

    Preheat oven to 350°F.

    In a large mixing bowl, beat the cake mix and butter. Add remaining ingredients and mix until well blended.

    Prepare a muffin pan, either with muffin cups or with muffin liners. Fill each muffin cup halfway full.
