  • 2 c. self-rising cornmeal
  • 1 c. sifted self-rising flour
  • 1/2 c. sugar
  • 2 1/4 c. buttermilk
  • 2 Tbsp. vegetable shortening, melted

Directions

    Preheat oven to 375°.

    Grease and flour 9 x 5 x 3-inch pan; set aside.

    Combine cornmeal, flour and sugar in bowl.

    Add buttermilk and shortening; blend thoroughly. Pour into prepared pan.

    Let stand 15 minutes.

    Bake 45 minutes or until golden brown.

    Cover pan with kitchen towel.

    Let stand until cool. Serve warm with butter or cool with sliced ham or turkey.
