Quick Doughnut "holes"

  • 2 eggs
  • 1 teaspoon baking powder
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 (100 g) containers vanilla yogurt (I use fat-free)
  • 3 cups canola oil
  • 14 cup powdered sugar

Directions

    Heat the 3 cups of oil in a very deep frying pan or a pot.

    Mix flour, sugar and baking powder in a bowl.

    Add eggs and yogurt to the flour mixture and mix well.

    Place the dough into the hot oil by tablespoon measure (you can test the oil by dropping a small amount of dough and if the oil bubbles around it immediately, it is ready for frying).

    Fry the doughnuts on one side until golden-brown, then turn with a fork and fry on the other side.

    Remove the doughnuts onto a plate lined with a couple of paper towels to drain the excess oil off.

    Once cooled a little, dust with some powdered sugar and enjoy!
