Quick Gazpacho *

  • 1 (15 oz.) can no salt added stewed tomatoes
  • 1 small garlic clove
  • 1/2 cucumber, peeled and seeded
  • 1/4 large green pepper, seeded
  • 1 Tbsp. red wine vinegar or cider vinegar
  • 8 drops Tabasco sauce or to taste

Directions

    Put canned tomatoes in freezer to chill while preparing vegetables.

    Cut peeled and seeded vegetables into large chunks. Put undrained tomatoes in food processor or blender and puree until smooth.

    Add garlic, cucumber and green pepper and process until still slightly lumpy.

    Stir in vinegar and Tabasco sauce.

    Cover and chill in refrigerator until time to serve.

    Makes 2 or 3 generous servings.
