Ingredients

  • 1 clove garlic, minced
  • 1 medium cucumber, chopped (skin on)
  • 1/2 medium green pepper, chopped
  • 1/2 c. green onions including tops, chopped
  • 1 small onion, chopped
  • 1 (16 oz.) can tomato sauce with tomato bits
  • 1 c. chicken broth ( I use canned)
  • 2 Tbsp. pure vegetable oil
  • 2 Tbsp. lemon juice
  • 1 tsp. dried sweet basil
  • dash of hot sauce
  • sour cream
  • cucumber slices

    Combine all ingredients;

    refrigerate at least 2 hours, overnight

    To serve, ladle into small bowls and garnish
