Quick Herbed Zucchini

Ingredients

  • 2 large zucchini
  • 3 Tbsp. butter or margarine
  • 2 medium onions, coarsely chopped
  • 1/2 tsp. salt
  • 1/2 tsp. dried thyme leaves
  • 1/2 tsp. dried basil leaves
  • 1/2 c. whipping cream (optional)
  • chopped parsley for garnish

Directions

    Slice the zucchini in 1/4-inch slices.

    In a heavy skillet, saute the zucchini in heated butter for 3 minutes, turning once. Remove from the pan and set aside.

    In the same pan, saute the onions until soft, but not browned.

    Combine the zucchini with the onions.

    Add the salt and herbs.

    Heat slowly over low heat.

    Add the cream, if used.

    Heat but do not boil.

    Arrange on a serving platter, garnish with parsley.
