Quick Herbed Zucchini

Ingredients
- 2 large zucchini
- 3 Tbsp. butter or margarine
- 2 medium onions, coarsely chopped
- 1/2 tsp. salt
- 1/2 tsp. dried thyme leaves
- 1/2 tsp. dried basil leaves
- 1/2 c. whipping cream (optional)
- chopped parsley for garnish
Directions

1Slice the zucchini in 1/4-inch slices.

2In a heavy skillet, saute the zucchini in heated butter for 3 minutes, turning once. Remove from the pan and set aside.

3In the same pan, saute the onions until soft, but not browned.

4Combine the zucchini with the onions.

5Add the salt and herbs.

6Heat slowly over low heat.

7Add the cream, if used.
-
8Heat but do not boil.
-
9Arrange on a serving platter, garnish with parsley.

10Makes 4 servings.
