  • 1 can tomato puree or soup
  • 2 to 3 eggs
  • 2 c. cooked rice or 4 to 5 slices toast (brown rice preferably)

Directions

    With a whisk or blender, combine eggs with tomato and cook in a double boiler.

    Stir occasionally (more often if in a saucepan) just until thick.

    Serve on the hot rice or toast.
