- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 2 (28-ounce) cans whole tomatoes, drained and coarsely chopped*
- 3 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 bay leaf
- 6 basil leaves, coarsely chopped or torn
- Salt and freshly ground black pepper
Directions

1In a large saucepan heat the oil over a medium heat.

2Add the garlic and cook until golden brown, about 1 minute.

3Add the tomatoes, tomato paste, oregano and bay leaf and cook, uncovered, stirring occasionally, until thickened, about 30 minutes.

4Stir in the basil and season with salt and pepper.
