  • 2 c. (8 oz.) shredded Colby Monterey Jack cheese
  • 1/2 lb. ground beef
  • 4 flour tortillas (10-inch)
  • 1 c. salsa
  • 1 1/2 tsp. chili powder
  • 1/2 tsp. cumin
  • green peppers, red peppers, onion, mushrooms, etc. (as desired)

    Cook meat; drain.

    Stir in seasonings.

    Spread 1/4 cup salsa and 1/2 cup meat mixture on each tortilla.

    Top each with 1/2 cup cheese and desired toppings.
