- 1 medium onion
- 1 garlic clove
- 12 teaspoon salt
- 1 tablespoon bacon drippings
- 1 (8 1/4 ounce) can stewed tomatoes
- 12 cup chicken broth
- 12 teaspoon chili powder
- 18 teaspoon ground cumin
- 1 cup Minute Rice
Directions

1Cut onion in half.

2Finely chop 1 half.

3Cut the other half in very thin slices.

4Mash garlic with salt to make a paste.

5Heat bacon drippings in a medium saucepan.

6Add chopped onion and garlic paste.

7Cook and stir until onion is tender.

8Add stewed tomatoes, chicken broth, chili powder and cumin.

9Mash tomatoes with a masher or the back of a spoon.

10Bring mixture to a boil.

11Stir in rice and sliced onion.

12Cover and let stand over very low heat 15-20 minutes or until liquid is absorbed.

13Use an asbestos heat diffuser if necessary to maintain very low heat.
