Quick Microwave Pudding

Ingredients

  • 1/3 c. sugar
  • 2 Tbsp. cornstarch
  • 2 c. milk
  • 2 egg yolks
  • 2 Tbsp. butter or margarine
  • 1 tsp. vanilla extract

Directions

    In a microwave-safe bowl, combine sugar and cornstarch.

    With a hand mixer or whip, beat in milk and egg yolks until smooth. Microwave on Medium for 5 minutes. Beat well.

    Microwave on High for 2 minutes; stir. If not thick, continue for 1 to 2 minutes. Blend in butter and vanilla.

    Cool, covered with plastic wrap directly on pudding to avoid skin on top.

    Good warm or cold. (Can also double recipe.

    Just microwave about 12 minutes, stirring every 2 minutes.)
