  • 1 (11 oz.) can kidney beans (undrained)
  • 1 tsp. salt
  • 1/2 tsp. garlic salt
  • 1 clove garlic, pressed
  • 1/4 tsp. pepper
  • 1 Tbsp. oil
  • 1/4 c. chopped parsley
  • 1 small zucchini, unpeeled and cut into cubes
  • 1/4 c. uncooked elbow macaroni
  • 2 stalks celery, chopped
  • 1 small carrot, diced
  • 2 green onions, chopped
  • 4 to 5 leaves Swiss chard, chopped
  • 3 Tbsp. butter
  • 1 (8 oz.) can tomato sauce
  • 2 1/2 c. water
  • 1/2 c. dry sherry
  • grated Parmesan cheese

Directions

    Place undrained kidney beans in large pot.

    Mash 2/3 of the beans and leave the rest whole.

    Add salt, garlic salt, garlic pepper, oil and parsley.

    Stir well.

    Add all vegetables, butter, tomato sauce and water; simmer 1 hour or more.

    Add sherry and macaroni; simmer 10 to 15 minutes longer.

    Sprinkle with cheese before serving.
