- 1 1/4 c. margarine, softened (2 1/2 sticks)
- 3/4 c. firmly packed brown sugar
- 1/2 c. granulated sugar
- 1 egg
- 1 tsp. vanilla
- 1 1/2 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt (optional)
- 1 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 3 c. Quaker oats (uncooked; quick or old fashioned)
Directions

1Preheat oven to 375°.

2Combine margarine and sugar; beat until creamy.

3Fold in egg and vanilla.

4Combine flour, baking soda, salt and spices; add to mixture and mix well.

5Stir in oats.

6Drop rounded teaspoonfuls onto ungreased cookie sheet.

7Bake 8 to 9 minutes for chewy cookies or 10 to 11 minutes for crispy cookies. Cool 1 minute on cookie sheet, then place on wire rack.

8Yield: Approximately 8 dozen.
