  • 1 c. Minute rice
  • 1 c. water
  • 3 Tbsp. raisins (optional)
  • 1/4 tsp. salt
  • 2 c. cold milk
  • 1 (3 3/4 oz.) pkg. Jell-O vanilla, lemon or coconut cream instant pudding and pie filling
  • 1/8 tsp. nutmeg

Directions

    Combine rice, water, raisins and salt in saucepan.

    Bring to a boil.

    Cover.

    Remove from heat and let stand to cool.

    Pour milk into bowl.

    Add pudding mix and nutmeg.

    Beat slowly with rotary beater or at lowest speed of electric mixer until blended, about 2 minutes.

    Stir cooled rice into pudding.
