- 1 onion, chopped
- 3 Tbsp. oil
- 1 tsp. salt
- 1 tsp. paprika pepper
- 1/2 c. diced, cooked ham
- 1/2 c. diced lunch meat
- 2 c. cooked long-grain rice
- 1 c. diced cheese
- 1/4 c. chopped chives
Directions

1Peel and finely chop the onion.

2Heat oil in a frying pan and saute onion for 5 minutes.

3Stir in salt, paprika and pepper, then add the diced ham and lunch meat.

4Fry for 1 minute.

5Add rice and mix thoroughly.

6Continue to cook for 4 to 5 minutes to reheat the rice.

7Add a spoonful of water if the mixture is too dry.

8Stir in cheese and cook another 1 to 2 minutes until cheese begins to melt.

9Sprinkle over the chives and serve hot with green beans. Serves 2.
