  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 Tbsp. margarine or butter
  • 1 pkg. (10 oz.) frozen spinach, thawed and well drained
  • 1 can (14-1/2 oz.) diced tomatoes, drained Safeway 1 lb For $1.29 thru 02/09
  • 1 cup cholesterol-free egg product

Directions

    Cook and stir onion and garlic in margarine or butter in 10-inch nonstick skillet over medium heat for 3 minutes or until tender; stir in spinach and tomatoes.

    Reduce heat to low.

    Pour egg substitute evenly over spinach mixture; cover.

    Cook 5 to 7 minutes until egg mixture is cooked on the bottom and almost set on top.

    Slide onto serving platter and garnish as desired.
