  • 2 9/16 cups flour
  • 1 teaspoon baking powder
  • 4 eggs
  • 1 3/8 cups brown sugar
  • 2/3 cup olive oil
  • 1 quince
  • 1 teaspoon cinnamon powder
  • 1 teaspoon ground fennel
  • chopped nuts for decorating

    Preheat the oven to 180 degrees Celsius.

    Grease a round pan with margarine and flour.

    Begin chopping the quince by using a food processor or even a blender (in this case add a little of the recipe's olive oil).

    Set aside.

    Add the eggs and the sugar and beat well until it becomes a fluffy mixture.

    Add the quince, the cinnamon, the fennel and the olive oil and mix again.

    Finally add the flour and the baking powder.

    Stir without beating until it becomes a homogeneous batter.

    Place the dough in the pan and sprinkle with coarsely ground nuts.

    Bake for 30 minutes.
