- 1 teaspoon olive oil
- 1 onion, ghopped
- 3 garlic cloves, pealed and pressed
- 34 cup uncooked quinoa
- 1 12 cups chicken broth
- 1 teaspoon ground cumin
- 1 green pepper, chopped
- 1 chili pepper, chopped
- 1 (15 1/4 ounce) can corn
- 2 (15 ounce) cans black beans, drained (or dried beans cooked)
Directions

1Heat oil in medium sauce pan over medium heat.

2Stir in onion, garlic, pepper, and chili cook until translucent.

3mix Quinoa in sauce pan and cover with broth.

4add cumin, salt and pepper.

5bring to boil.

6cover and simmer for 20 minute.

7stir in corn and black beans and heat through.

8add cilantro.
