  • 1 teaspoon olive oil
  • 1 onion, ghopped
  • 3 garlic cloves, pealed and pressed
  • 34 cup uncooked quinoa
  • 1 12 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 green pepper, chopped
  • 1 chili pepper, chopped
  • 1 (15 1/4 ounce) can corn
  • 2 (15 ounce) cans black beans, drained (or dried beans cooked)

Directions

    Heat oil in medium sauce pan over medium heat.

    Stir in onion, garlic, pepper, and chili cook until translucent.

    mix Quinoa in sauce pan and cover with broth.

    add cumin, salt and pepper.

    bring to boil.

    cover and simmer for 20 minute.

    stir in corn and black beans and heat through.

    add cilantro.
