  • 2 cups cooked quinoa
  • 2 eggs
  • 2 Tbsp green onion, chopped
  • 2 Tbsp fresh mint, chopped
  • 2 Tbsp parsley, chopped
  • 1/2 cup grated cheese, I used Gruyere cheese
  • 1/2 cup bread crumbs
  • 1/4 tsp. salt
