- 1 T vegetable oil
- 1/2 cup onion, chopped
- 2 carrots, chopped
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 2/3 cup walnuts, chopped
- 1/4 cup fresh parsley, chopped
Directions

1Heat oil in saucepan over medium-high heat.

2Cook onion in oil for 5 minutes, or until translucent.

3Add carrot and cook 3 minutes more.

4Stir in quinoa & vegetable broth.

5Reduce to simmer, cover & cook 15-20 minutes or until qinoa is tender & fluffy.

6In a bowl, toss quinoa with walnuts & parsley.

7Serve hot or at room temp
