Quinoa Salad

- 1/2 cups Quinoa
- 1 cup Water
- 2 stalks Scallions
- 1/2 whole Cucumber
- 3/4 whole Tomato
- 1/2 whole Lemon
- 2 Tablespoons Olive Oil
- 1 pinch Salt
- 1 pinch Pepper
Directions

1Begin by rinsing the quinoa with water three times.

2You want to wash the bitter coating off the quinoa granules.

3Then add 1 cup of water to the 1/2 cup of quinoa in a small pot and bring to a boil.

4Once the water is at a boil, turn down the heat, cover, and cook the quinoa for 15 minutes until all the water has been soaked up by the quinoa.

5While the quinoa is cooking, go ahead and finely chop the vegetables.

6Start with the scallions.

7Cut in half lengthwise and then dice.

8Add to a bowl.

9Then cut the cucumbers into eighths and then dice.

10Add to scallions in the bowl.

11Core and deseed the tomato and cut into a small dice.

12Add to the bowl.

13At this point the quinoa should be done.

14Cool by spreading quinoa on an aluminum foil covered cookie sheet.

15Once the quinoa has cooled, add it to the bowl of vegetables.

16Add the juice of half a lemon, a few tablespoons of olive oil, a pinch of salt and a few crackles of pepper.

17Let the salad marinate for 30 minutes and enjoy!

18To make this a lunch salad, add some chickpeas and crumbled feta cheese!
