  • 1/2 cup green peppers
  • 1/2 cup red peppers
  • 1/2 cup yellow peppers
  • 1/2 cup orange peppers
  • 1 large Spanish onion
  • 3 tablespoons olive oil
  • Garlic powder
  • Ground black pepper
  • 1/2 pound mushrooms, sliced
  • 1 can sliced black olives
  • 1 cup rice

Directions

    Chop peppers and onions into small pieces.

    Saute peppers and onions in olive oil and season with garlic and black pepper.

    Add mushrooms and olives to the mix.

    Slow cook 1 cup of rice with water according to package instructions.

    When done add peppers, mushrooms, onions and olives.
