- 2 (10 oz.) pkg. cleaned, cooked baby shrimp
- 3 c. cooked rice
- 1/4 c. chopped celery
- 1/4 c. chopped pimento-stuffed olives
- 1/4 c. chopped green pepper
- 1/4 c. chopped onion
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 Tbsp. mayonnaise
- crisp head lettuce
- 2 tomatoes
- 1/2 c. French dressing
- 1 lemon
Directions

1Combine shrimp, rice, celery, olives, pepper and onion in large bowl.

2Cover and chill.

3Before serving, stir together salt, pepper and mayonnaise.

4Toss with shrimp mixture.

5Spoon shrimp onto lettuce.

6Garnish with tomato wedges.

7Serve with French dressing and lemon wedges.
