- 3 c. flour
- 3/8 c. brown sugar
- 3/4 c. raisins
- 3/4 tsp. ginger
- 1 tsp. nutmeg
- 1 1/2 tsp. cinnamon
- 1 1/2 Tbsp. baking powder
- 3/8 c. egg substitute
- 1 1/2 c. nonfat milk
- 1 1/2 tsp. vanilla
Directions

1In a large bowl, combine all dry ingredients, including raisins.

2Mix together egg substitute, nonfat milk and vanilla. Add liquid mixture to dry mixture and mix well.

3Pour into a greased 9 x 5-inch loaf pan.

4Let stand for 5 minutes.

5Bake at 375° for 45 minutes or until done.
