- 2 c. sliced beets
- 1/3 c. raisins
- 1/4 c. sugar
- 1 tsp. cornstarch
- 3 Tbsp. lemon juice
- 2 Tbsp. butter
Directions

1Drain beets, reserving 1/3 cup liquid.

2In medium saucepan, combine reserved beet liquid and raisins.

3Cover.

4Simmer until raisins are plump, about 5 minutes.

5Combine sugar and cornstarch. Stir into raisins in pan.

6Add lemon juice and butter.

7Cook and stir over medium heat until slightly thickened.

8Stir in beets and simmer until mixture is heated through, about 5 minutes.
