- 1 (1 lb.) can sliced beets
- 1/4 c. sugar
- 1 tsp. cornstarch
- 2 Tbsp. butter or margarine
- 1/3 c. light or dark raisins
- 3 Tbsp. lemon juice
Directions

1Drain beets, reserve 1/3 cup liquid.

2In medium saucepan, combine reserved beet juice and raisins.

3Cover.

4Simmer until raisins are plumped, about 5 minutes.

5Combine sugar and cornstarch, stir into raisins in pan.

6Add lemon juice and butter, cook and stir over medium heat until slightly thickened.

7Stir in beets and simmer until mixture is heated through, about 5 minutes. Garnish with a twist of lemon.
