  • 1 Tbs minced shallots
  • 1 1/2 Tbs flour
  • 6 Tbs heavy cream
  • salt and pepper
  • Ramequin mixture:
  • 1/2 cups flour
  • 2 cups milk
  • 3 1/2 Tbs butter
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • pinch of nutmeg
  • 4 eggs
  • 1 1/3 cups grated Gruyere cheese
  • 1 Tbs butter

Remove from heat, add cream, stir over moderate heat until thickened.
