- 16 oz pinto beans
- 6 ancho chili pepper
- 6 clove garlic
- 15 oz tomatoes
- 1 tsp brown sugar
- 1 tsp apple cider vinegar
- 1 tsp paprika
- 1 tsp ground cumin
- 1/2 tsp oregano
- 1 cup water
- 6 cup beef broth
- 1 salt
- 1 pepper
Directions

1Soak beans overnight

2Drain beans.

3Cook anchor chilies on each side.

4Remove from heat.

5Add water to let them rehydrate.

6Cook the onions and garlic until soft.

7Transfer onions and garlic to blender.

8Add tomatoes, brown sugar, apple cider vinegar, paprika, cumin, oregano, water and hydrated chilies.

9Puree until smooth.

10Add pinto beans and stock and stir in puree.

11Bring yo boil then simmer 2 1/2 hours stirring occasionally.
