- 1 lb. lean ground beef
- 2 to 3 1/2 c. canned tomatoes (undrained)
- 1 c. chopped green bell pepper
- 1/2 c. uncooked long grain rice (NOT INSTANT)
- 1/4 tsp. dried basil
- 1/2 tsp. salt
- Dash of pepper
- Processed or other cheese slices (if desired)
Directions

1In a large, non-stick skillet, brown ground beef over medium heat.

2Drain.

3Add tomatoes, bell pepper, onion, rice, basil, salt and pepper.

4Mix gently but well.

5Cover reduce heat to simmer, and continue cooking until rice is cooked and most of the liquid is absorbed.

6Garnish each serving with a slice of cheese, if desired.
