- 1 onion, cut into wedges
- 2 Tbsp. oil
- 1 (14 1/2 oz.) can Mexican-style stewed tomatoes
- 1/2 tsp. oregano, crushed
- 1 1/2 c. shredded cooked chicken
- 1 (4 oz.) can whole green chiles, cut into strips
- 4 flour tortillas
- 2 tsp. red wine vinegar
Directions

1In large skillet, cook onion in 1 tablespoon oil until tender-crisp.

2Drain tomatoes, reserving liquid.

3Add liquid and oregano to skillet; cook over high heat 3 minutes, stirring frequently.

4Stir in meat and chiles; remove from heat.

5Spoon chicken mixture into each tortilla; roll up.

6Add remaining tablespoon oil to skillet and lightly brown roll-ups.

7Chop tomatoes; stir in vinegar.

8Pour over roll-ups; cover and cook over low heat for 3 minutes.

9Makes 4 servings.
