Rancho Lima Beans

  • 2 c. (1 can) lima beans
  • 1/2 lb. ground beef
  • 2 onions, sliced
  • 1 clove garlic, pressed
  • 1 (28 oz.) can whole tomatoes, drained
  • 1 tsp. crushed red pepper
  • 1 tsp. salt
  • 1 tsp. chili powder
  • 1/2 c. shredded Cheddar cheese

Directions

    Cook beans in salted water in Dutch oven until tender (20 to 30 minutes).

    Drain and reserve 1 cup liquid.

    Return to pot and set aside.

    Cook beef, onions and garlic until brown.

    Add beans, liquid, tomatoes and spices.

    Cover and simmer 50 minutes.

    Stir in cheese.

    Cover and cook an additional 10 minutes.
