- 2 cups oatmeal
- 1 1/2 cups brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, at room temperature
- 1 cup raspberry jam
- 1 tablespoon lemon juice
Directions

1Preheat oven to 325°.

2Mix all dry ingredients.

3Cut in butter until crumbly.

4Place half of crumb mixture in a 13x9 pan.

5Bake 10 minutes, let cool.

6Return oven to 325°.

7Mix jam and lemon juice well.

8Spread carefully over cooled crumbs.

9Sprinkle jam with remaining crumb mixture.

10Gently push crumbs into jam.

11Bake 15-20 minutes or until light golden brown.
