- 200g choc-chip biscuits, crushed
- 60g butter, melted
- 250g block PHILADELPHIA Cream Cheese, cubed and softened
- 1/2 cup caster sugar
- 1/2 cup cream
- 1 egg
- finely grated rind of 1/2 lemon Safeway 4 ct For $5.00 thru 02/09
- 200g fresh or frozen raspberries
Directions

1Combine biscuit crumbs and butter then press into a 20x20cm removable base tin.

2Chill.

3Beat the Philly* and sugar with electric beaters until smooth.

4Add the cream, egg and lemon rind and beat until smooth.

5Pour into prepared base and top with raspberries.

6Bake at 160 degrees C for 45 minutes, or until set in the middle.

7Allow to cool, then remove from pan and cut into squares to serve.
