Raspberry Chia Jam

  • 2 cups Fresh Or Frozen Raspberries
  • 2 Tablespoons Honey (or White Sugar)
  • 1 Tablespoon Lemon Juice
  • 2 Tablespoons Chia Seeds

Directions

    Add raspberries to a medium saucepan. Cook over medium heat until raspberries break down and become liquidy, about 8-10 minutes. Remove pan from heat.

    Press raspberries with the back of a spoon or potato masher. Stir in honey and lemon juice. Add more to sweeten, if desired.

    Add chia seeds and stir. Let stand until thickened, about 5-10 minutes. If you want a thicker texture, add more chia seeds, 1 teaspoon at a time, until it reaches your desired consistency.

    Transfer to a mason jar with lid or airtight container and let cool completely. Jam may be stored for up to 2 weeks in the refrigerator or up to 3 months in the freezer.
