- 1/4 c. sugar
- 1/4 tsp. salt
- 1/4 tsp. almond extract
- 2 eggs, separated
- 1 1/2 c. flour
- 1 c. red raspberry preserves
- 1/2 c. coconut
- 1/2 c. sugar
Directions

1Preheat oven to 350°.

2Cream the first 4 ingredients.

3Add yolks and mix.

4Mix in flour.

5Pat into bottom of oblong pan. Bake for 15 minutes.

6Spread hot crust with preserves; top with coconut.

7Beat whites until foamy.

8Add sugar; beat until stiff peaks form.

9Spread over coconut.

10Bake for 25 minutes.

11Makes 2 dozen bars.
