- 1 c. (2 sticks) butter
- 1 egg
- 1 tsp. vanilla
- 1 tsp. baking powder
- 1 c. sugar
- 1 Tbsp. milk
- 3 1/4 c. flour
- 1/4 tsp. salt
Directions

1Cream butter and sugar.

2Add egg, milk and vanilla.

3Combine flour, baking powder and salt; add to creamed mixture.

4Shape dough into 1-inch balls; put on cookie sheet and press down slightly.

5When cooled, spread raspberry preserves between 2 cookies.

6Let preserves squeeze out of cookie.

7Roll sides in shredded coconut.

8Bake at 350° for 20 minutes.
